Chocolate Chip Pumpkin Bread

It's that time of year....pumpkin everything! One of our favorite pumpkin treats is homemade chocolate chip pumpkin bread. We serve this bread as either a snack or breakfast for our kiddos. It's a family favorite, and we hope that this recipe will soon become a favorite of yours as well.





Chocolate Chip Pumpkin Bread


Ingredients


2 Cups of all-purpose flour

1/2 tsp of salt

1 tsp of baking soda

1/2 tsp of baking powder

1 tsp ground cloves

1 tsp ground cinnamon

1 tsp ground nutmeg

1 and 1/2 sticks of butter, room temperature (I prefer unsalted)

2 cups of sugar

2 large eggs

1 15 oz of 100% pure pumpkin

1 cup of chocolate chip (more if you prefer)



Directions:



Step One:


Preheat the oven to 350 degrees.


In a bowl mix together flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg together.





Step Two:


In an electric mixer, mix together butter, sugar, eggs, and pumpkin.



Step Three:


With the mixer on low, gradually add the flour mixture into the wet mixture. Do not over mix. Stop once all ingredients are combined.





Step Four:


Add chocolate chips. We usually add 1 cup, but you may want to add more or less depending on your liking. You can also add cranberries or pecans too.



Step Five:


Grease your bread pan. I cheat and use Pam with flour. Then pour your pumpkin mixture into your bread pan.





Step Six:


Turn oven down to 325 degrees. Then put the mixture into the oven, and bake between 60 to 80 minutes.


We like to bake ours for 65 minutes because we like it a little underdone. You will just need to test the bread as a cake with a toothpick. Also, baking times may vary depending on your oven.



Step Seven:


Let the bread cool in the pan for about 15 minutes and then serve. Best with coffee or milk (or at least in our opinion.) You can also wrap the bread with foil and serve for the next 2 days.
