Bunny Cake

This bunny cake is the only treat that needs a little explaining. Follow these easy steps, and you can assemble one in no time! :)

Step One: Bake two round cakes, cool, wrap in plastic wrap, and freeze.

Step Two: Once frozen, cut the cakes to make even and save the tops to create the bunny tail.

Step Three: Ice the top of one cake and then add the second layer.

Step Four: Cut the cake in half (or the best you can, like the picture below. ha)

Step Five: Find a platter and put wax or parchment paper on the platter for the cake.

Step Six: Only use half the cake and put on the parchment paper. Use the cutout to make the head larger on your bunny.

Step Seven: Frost the cake.

Tip: Use a LOT of icing. You don't want to go light. The more icing you have on the cake the better the coconut will stick.

Also, use the leftover tops of the cake to mash together to make a bunny tail. Once you have the tail created, ice as well.

Step Eight: Now that you have a thick layer of icing, using your hands add coconut to your cake.

Step Nine: Make bunny ears. I used card-stock and scrapbook paper I had at the house.

Step Ten: Add the bunny ears and use chocolate chips for the eyes. Your bunny is starting to take shape!

Step Eleven: Then used a M&M for the nose.

If you want to go a little lighter, create fruit k-bobs. By adding a Peep on top, and you have a quick and simple Easter treat!

I love this naked cake with thyme garnish. I used the thyme to create ears and wrapped the bottom of the cake with thyme too. A sweet, minimalist treat!
